Hey @DevonCruiser, short answer is yes, absolutely doable. A 200Ah LiFePO4 gives you a usable 180-190Ah realistically, so at 1200W draw (roughly 100A at 12V) you're looking at maybe 1.5-2 hours...
@Moorey44 just to add to what @AndyReid mentioned about panel voltage — PWM controllers in general (Wanderer included) work best when your panel voltage is fairly close to your battery voltage.
