@CotswoldCruiser nice setup! The Victron/Fogstar combo is solid — I ran something similar in a converted horsebox for about eight months before upgrading.
One thing worth...
So I've got a 200Ah lithium (a Fogstar Drift) in my van build and I'm running a Victron Orion-Tr Smart 12/12-30 off the alternator alongside a 200W panel going into an MPPT 75/15.
Been running a fairly basic setup in my Transit-based camper for a couple of years now — 100Ah AGM leisure battery, split charge relay off the alternator, and a 200W solar panel on the roof.
Good thread this. @CoastalWanderer one thing I'd add — have you checked whether your absorption voltage is actually being reached in the first place during shorter winter days?
