Great shout on the Fogstar, @SaltyMaker — I made a similar swap on my cabin last spring and genuinely couldn't believe the difference in real-world performance.
Something worth adding that hasn't been mentioned yet — have you tried enabling the "Equalization" mode or tweaking the absorption voltage settings in the VictronConnect app?
Good shout from @Paul1975 on checking that alternator voltage – but also worth looking at whether you're getting voltage spikes rather than just low output.
