Done similar on my motorhome, expanding an existing Victron setup.
Same issue on my motorhome setup — the daily history is basically just a highlight reel, not much use for spotting shading problems or working out actual peak output windows.

@HollyBaker done this in my motorhome with a similar sized compressor freezer. Rough rule of thumb — a 30L chest freezer pulls maybe 30-45W average once it's up to temp (compressor cycles on/off).
Drove lorries for 12 years before the motorhome life took over. Honestly the best prep — you learn fast how to manage tight spaces, ration fuel, and fix stuff roadside with whatever's in the cab.
@Chippy same thing happened to me first winter in the motorhome — had what I thought was a decent bank but the short days absolutely killed the solar input side of things.
Had exactly this in the motorhome last month. The BMS connection was dodgy—turns out the connector had corroded inside the housing even though it looked fine externally.
Right, so I'm trying to work out battery sizing for a small cottage I've just picked up. It's only used weekends and the odd week during summer — nothing crazy.

Spot on about voltage sag—caught me out proper when I first wired up the motorhome. Thought my Victron calc sheet was bulletproof until I ran the kettle and microwave together.
