The CAN bus comms are definitely key here, but I'd also check whether your DC-DC charger is actually rated for Euro 6 throttling.
Have you lot considered a compressor unit instead? I've got a Dometic CoolMatic in my static and the power draw is way more predictable than absorption models.

Depends entirely on your EV charging plans, mate. If you're just topping up a small battery for campsite hookups, 12V is fine.
